Sweet Potato Cake & Curried Veg

Low Calorie Recipe

This is perfect for that low calorie lunch. It’s only 357 calories per serving.

Ingredients

1 Large Sweet Potato
1/2 Cauliflower
1/2 Broccoli
4 Radish (per person)
1/2 tsp Garlic Powder
1/2 tsp Cumin
1/2 tsp Za’atar
1/4 tsp crushed clove
Pinch of Sumac
Oil
Coconut Oil
Handful finely chopped coriander

Sweet Potato Cake⁣ 🍠

Dice and boil one large sweet potato. When it’s soft, mash it up. Add salt, pepper, garlic powder, coriander, 1/2tsp cumin and pinch of sumac. ⁣

Place a heaped tablespoon onto a sheet of greaseproof. Throw on a medium to hot pan with 1 tsp coconut oil. Add the cake to the pan and peel off the paper. Let it cook until golden, then flip. Cook until other side is golden and then you’re good. ⁣

Curried Veg

Coat the cauliflower and broccoli with a tablespoon of curry powder, sumac, coriander salt, za’atar, crushed clove, and pepper. Placed on greaseproof paper and using an oil sprayer, lightly coated with Brighter Gold. Mix it all together and placed in an oven at 180 for 10-15 minutes. Add the radish for the last 5 minutes.
