Easy Donuts!
When I say these are easy, I mean, these are EASY! Perfect for a weekend treat. Trust me, easy. Let's go…
Ingredients

500g Plain Flour
60g golden caster sugar
15g yeast
4 eggs
2 tsp fine salt
125g soften butter
Method

Mix together all the dry ingredients together in a bowl, then add 150g of warm water and the egg mixture. Using a dough hook, mix on a medium speed for around 8 mins or until the dough starts coming away from the sides and forms a ball. Turn off the mixer and let the dough rest for 1 min.

Start your mixer up again on a medium-ish speed and slowly pour the butter into the dough mixture. Once it is all mix together, mix on high speed for around 5 mins until the dough is glossy, smooth and elastic when pulled.

Cover the bowl with cling film leave to prove until it has doubled in size.

Knock back the dough in the bowl briefly, then pull dough onto a lightly floured surface. Flour your rolling pin, and begin to shape and flatten until about 2-3cm thick.

Cut your shape of choice. Place in a tray lined with greaseproof paper, and cover again with cling film. Leave to prove for an hour (or longer if you want)

In a pan add 2 litres of veg oil. Bring to a temp of 180 degrees/350 Fahrenheit. Carefully place your donut in the oil. Flip over when it begins to go golden brown. Once both sides are done, remove and set to the side on kitchen paper to absorb the excess oil.

Vanilla glaze

1 cup icing sugar
1/4 cup water
1/2 tsp vanilla

Mix it. Done.

Jam filled

If you don’t have a piping bag to stab into the donut, spoon a tbsp of jam into the corner of a zip lock bag. Using your pinky, or a knife, create a hole that you can insert the bag to squeeze in the jammy goodness. Snip the corner off the bag, ram it in the and squeeze!!

Sugar coated

Add caster sugar to a bowl, throw in the donut. Roll it about until it’s covered! Simple.
