Thai Chicken Bowl
One of my favourite dishes. Rammed with texture and flavour.
If you like fragrant Thai food then this is for you. Easy, tasty and so so good
Coconut rice, chicken, roasted broccoli, chilli fried egg, dill and a side of nuoc cham.
Coconut rice
Rice in a pan with a tin of low fat coconut milk and a half cup of water, along with a pinch of salt. Cook it medium heat until rice is soft. If you need more liquid, add a splash of water. When it’s done, it should be sticky and SO TASTY!
Chicken
2 teaspoons paprika
1 teaspoon turmeric
1 teaspoon coarsely ground black pepper
1 teaspoon ground coriander
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon cayenne powder
The flavour to this is so fragrant and fruity. It’s a real winner.

I butterflied two chicken breasts, and cook it in a splash of @broightergoldrapeseedoil when it was sealed, I added the seasoning and let it cook away until cooked
Broccoli

Dead easy. On an baking tray, coated with @broightergoldrapeseedoil and sea salt. Stick it in the over until they start to look a wee bit crispy. Tidy.
Chilli fried egg

In a pan, add some @broightergoldrapeseedoil and @sriracha_fg, let it heat. Then crack in an egg and let it cook low and slow. You want this to be runny. Sprinkle a tiny amount of @maldonsalt on your yolk.
Nuoc Cham

1/4 cup fish sauce
1/4 cup sugar
1/4 cup warm water
1 lime
Chillies for heat

In a bowl add the sugar and water. Stir until sugar has dissolved. Add the fish sauce and juice of one lime. Add your chillies, and stir.

You’ll want to use a teaspoon and decant some of this over your rice. Ohhhhhh baby she’s good.

When you plate it together, sprinkle over good bit of finely diced FRESH dill and some chillies. Trust me, you’ll thank me later 🖖🏻
