Halloumi & Sweet Potato Salad
This is a tidy recipe. Perfect for that kick start into healthy eating.
Mixed salad leaves
Rocket
Sweet potato
Halloumi
Beetroot crisps
Garlic & Lime dressing
Pomegranate
Quinoa
Chillies

In the oven, place your sweet potato (coated in oil and seasoned with salt and pepper).

Add 100g of quinoa to a pan and about 500ml of veg stock. Bring to boil, then let it simmer until quinoa is translucent.
Dressing

2 tbsp oil
1 tbsp lime or lemon juice
1 tbsp white wine vinegar
1 tsp honey
1 tsp easy garlic

Stick it in a bowl and mix. Decant over dish with a table spoon. Don’t add too much. It’s garlicy!!!
Just top with coriander, sliced chillies, and whatever else you fancy. Tasty.
