One Pot Pad Thai
One pots are hard to beat.
I used an @instantpotofficial for this. But you can just a regular pot. It’ll work the same. Just takes a little longer.
Ingredients

Couple of chicken breasts
700ml chicken broth
1 can coconut milk
1/4 cup soy sauce
2 tablespoons fish sauce
2 tablespoons honey
1/3 cup peanut butter
1/4 cup Thai red curry paste
2 peppers, chopped
1 inch fresh ginger, grated
1 clove garlic, minced
2-4 nests of noodles
Juice of 1 lime
Handful of coriander, roughly chopped.
Method

Seal the chicken. Bung everything into the pot, minus the coriander and noodles. Cover and cook on high pressure for 10 minutes.

Let the steam out. And put instantpot in sauté mode. Let it go until it’s the consistency you want. Add coriander and noodles.

Once noodles are done, dish it up.
