Spiced scrambled egg Bagel w/ Pepperami ⁣

This delicious scrambled egg bagel is exactly what I want to get my hands on first thing in the morning. The secret to a good scrambled egg, low and slow. When it begins to form the scramble, take your pan on the heat for 30 seconds then off the heat for 15 seconds, stirring the whole time. It probably takes a little bit longer than you’re used to, and is a bit of extra work and a slight faff...but trust me - it’s worth it. ⁣

 
Low Calorie Breakfast Bagel 🥯

Ingredients

2 large FR eggs⁣
1 bagel⁣
1 pepperami stick (any flavour)⁣

Spice mix⁣

1 tsp paprika⁣
1/2 tsp dried thyme⁣
1/2 tsp dried oregano⁣
1/2 tsp cayenne⁣
Salt & pepper⁣

Method

Crack your eggs into a bowl, using a whisk or fork, whisk as hard as you can to get as much air in the eggs as possible. Just breaking the told and giving it a wee whisk won’t cut it. PUT SOME ELBOW GREASE INTO IT. ⁣

Pour your egg mixture into a nonstick pan over low heat. Let it begin to warm, stir it regularly to ensure you don’t miss the point the eggs beginning to solidify. ⁣

Once the egg starts forming to solids, mix on the heat for 30 seconds, off the heat for 15 seconds. When the egg is about 80% of the way done, add your spice mix and diced pepperami. ⁣

Optional extras: add spinach, kale, bacon lardons, or cheese to your eggs. Also, feel free to top with sriracha. Delicious. Serve in your bagel, on top of cress or rocket.

Totaling in at 404 calories.
