Satay Chicken w/ Coconut Rice 🍚
This dish is a prime example of good food, tasting great! You’d hardly think it was 168 calories for that chicken (not including rice, obviously!) but even with that extra rice. It was still under 620 calories! I need a lie down after that!
This is a delicious meal, but take a little time to prep. So start it the night before or at least 4 hours before you want to eat. Let’s go!
Ingredients
2 chicken breasts (300g)
MARINADE

15g of fresh ginger
1 tsp light soy
1 tsp fish sauce
1-inch piece fresh turmeric
1/2 white onion
1 lime juices
1 red chilli (optional)
SATAY SAUCE
-
1 heaped tbsp crunchy peanut butter
1 tsp sriracha
1 tsp light soy sauce
1-2 tbsp hot water
1/2-1 tsp agave syrup or honey
RICE
-
1 cup rice per person
1/2 tin of light coconut milk
1/4 lime juice
Method
Step one: stick all the marinade ingredients into a blender and blitz until they become a paste.
Numbaaaa 2: put the chicken into a zip lock bag and decant your marinade into the bag. Seal it. Give it a good mix-up and then place it in the fridge for at least 4 hours.
Step 3: when you’re ready to cook chicken, get that oven heated to about 120. Place chicken on greaseproof paper (on an oven-proof tray, obviously) and place it into the oven. Make sure you cover with all the marinade left in the bag.
Cuatro: Let that chicken enjoy its time in the heat for about 45-50 minutes. Then take it out. Crack that oven up to around 220. When it’s up to temp, slide those breasts in for another 25 minutes.
Step five: add all your satay ingredients into a pan, bring to a simmer. Mixing it while it’s coming up to temp. When it reaches simmer take it off heat. Look and see if you feel you want to add more water or not. Up to you.
The next step: remove chicken and set it to the side for 5 minutes to rest. If you want that extra singe, take a chef’s blowtorch to it (that’s what I did) and give those charred areas. All extra flavours.
RICE
Add your rice to a pan, cover it with water and keep pouring until your water has a 2:1 ratio. Just before it’s the completed ration, switch pouring water with the half tin of coconut. Cook it until liquid has gone, add lime.
