low calorie carrot cake

Ingredients

300g grated carrots⁣
250g SR flour⁣
40g raisins ⁣
Zest of 1 orange⁣
1 tsp baking powder⁣
1 tsp bicarbonate of soda⁣
2 tsp ground cinnamon⁣
1/2 tsp salt⁣
50g butter⁣
25g soft brown sugar⁣
4 tsp sweetener⁣
2 large FR eggs⁣
80ml skimmed milk⁣
1 tsp vanilla⁣

ICING
-⁣
150g quark⁣
100g light cream cheese⁣
2-3 tsp sweetener⁣
1 tsp vanilla ⁣

Method

Stick the oven on at 180. Then line the bottom of a cake tin with greaseproof. ⁣
-⁣
In a large bowl, mix together your carrot, raisins, orange zest, flour, bicarb, packing powder, salt, and spices. ⁣
-⁣
In a small pan, melt the butter, sweetener, and sugar. Remove your pan from the heat and add milk. Then whisk in your beaten eggs and vanilla.⁣
-⁣
Make a well in the middle of dry ingredients, decant in your wet mixture, and combine. Pour that combined mix into your prepped cake tin. ⁣
-⁣
Slide it into the oven for around 30 minutes. Do the old ‘poke a knife in the middle to make sure it’s cooked’ trick. ⁣
-⁣
Place cake on a wired rack, and let it cool.⁣

ICING
Throw it all in a bowl, whisk it up. Then stick it on top. ⁣
