Low Calorie Carrot Cake 🥕
This is a decent substitute for the real thing, it’s never going to be the same, but it’ll help that sweet tooth, and accompanied with a cup of tea, Perfect!
Ingredients
300g grated carrots
250g SR flour
40g raisins
Zest of 1 orange
1 tsp baking powder
1 tsp bicarbonate of soda
2 tsp ground cinnamon
1/2 tsp salt
50g butter
25g soft brown sugar
4 tsp sweetener
2 large FR eggs
80ml skimmed milk
1 tsp vanilla
ICING

150g quark
100g light cream cheese
2-3 tsp sweetener
1 tsp vanilla
Method
Stick the oven on at 180. Then line the bottom of a cake tin with greaseproof.

In a large bowl, mix together your carrot, raisins, orange zest, flour, bicarb, packing powder, salt, and spices.

In a small pan, melt the butter, sweetener, and sugar. Remove your pan from the heat and add milk. Then whisk in your beaten eggs and vanilla.

Make a well in the middle of dry ingredients, decant in your wet mixture, and combine. Pour that combined mix into your prepped cake tin.

Slide it into the oven for around 30 minutes. Do the old ‘poke a knife in the middle to make sure it’s cooked’ trick.

Place cake on a wired rack, and let it cool.
ICING
Throw it all in a bowl, whisk it up. Then stick it on top.

Calories depend on how many bits you cut the cake into. The whole cake is 2160 calories. So:
8 slices - 270 each
10 slices - 216 each
