Fluffy Lemon & Blueberry Pancakes 🥞
The best blueberry and lemon pancakes I’ve ever had. I think I’ve peaked in my pancake game. They might never be this good again. Low calorie AND so tasty.
Ingredients
125g blueberries
200g plain flour
1 large FR egg
50g low fat cream cheese
4g cream of tartar
4g bicarbonate of soda
175g oat milk or semi skimmed
Zest of 1 lemon
3 tsp sweetener
2 tbsp agave syrup
Method
In one bowl, mix your dry ingredients and lemon zest. Make a well in the middle. In a secondary bowl mix your wet ingredients, cream cheese and egg. Combine the two and whisk together well. Mix in 3/4 of your blueberries.

Heat a non stick pan. Decant your mix onto the pan. Feel free to spray the pan with oil if you need. Although I’d recommend investing in a good nonstick. Removes the need of oil for a few recipes.

Heat on one side for 3-4 minutes then flip. Same on the second side.

Serve with agave, more lemon zest and left over blueberries. This serves 4 people, and comes in at 300 cals per serving. So, make your quarter of the mixture into as big or small shaped pancakes as you’d like.
