Elotes 🌽
This Mexican street food staple is so simple but full of flavour. The secret is getting that char down on the corn.
Ingredients
Corn on the cob
Mayonnaise
Chilli powder
Coriander
Method
Place corn in the oven for about 15 minutes. Remove and using a chef torch or a gas stove, char the corn.
Add a squeeze of mayo on your cob, spread all over. Sprinkle your chilli powder over it and then dramatically throw your chopped coriander on top. Simple and delicious.
