Egg Tortilla 🥚
This is a diverse recipe which you can make with flavours you like, and veg that you love. I used fennel and chilli sausage, alongside smoked ham, peppers, peas, parsley, spring onion, white onion, chillies and mushrooms.
Once you have the base, everything else is straight forward.
Ingredients
THE BASE

8 large FR eggs
1 tsp Dijon mustard
1 tbsp light cream cheese
Salt and pepper

Whisk these altogether. Done.

What I used for this recipe:
2 Sausages
150g Smoked ham
2 peppers (diced)
100g frozen peas
50g mushrooms
1 small white onion (finely diced)
3 spring onion (finely sliced)
50g low-fat cheddar
Method
I grilled my sausage, then cut it into chunks.

In a non stick pan I added my onion my peppers, onions and frozen peas. I gave it a quick cook to loose the water from peas.

I threw the sausage, mushroom and sliced ham in to the pan alongside peppers etc. And let the ham and mushrooms cook for a minute or two.

Then I poured the egg mixture, parsley and spring onion to the same pan. Using a wooden spoon, I made sure the mixture was spread evenly.

Over a medium heat, I let the mixture cook until it had set around half way up. Grated the light cheddar cheese over the top and stuck it under the grill (medium heat as well) until fully cooked.

Serves four. 423 calories per slice - for mine at least.

Top with whatever you like. Even add pico de Gallo or sriracha hot sauce - delicious.
