These are definitely perfect for a taco Tuesday treat, or any day for that matter. LETS GO!
Ingredients
MARINADE 🍶
500g chicken Breasts
1 cup buttermilk
1 tsp salt
1 tsp paprika
1 tsp cayenne pepper
1/2 tsp garlic powder
COATING 🧂
2 cups plain flour
1 tbsp chilli powder
1 tbsp cumin
1 tsp paprika
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tbsp baking powder
SAUCE 🥑
2 avocados
1 tsp cider vinegar
1 1/2 cup buttermilk
2 cloves of garlic
Handful coriander
Salt & Pepper
Method
Mix your marinade ingredients together and then add your chicken breast (make sure you cut them into strips first). Cover and let it sit in the fridge for AT LEAST 4 hours.
-
Combine your COATING ingredients into a bowl. Mix together. Remove pieces of chicken and coat with the coating mix.
-
In a large pan or fryer, add 2L of oil. Bring to 170 degrees and add your coated chicken in SMALL batches. Once cooked, remove and set on kitchen roll to absorb some of that oil. Repeat until all chicken is cooked.
-
For the sauce, just add everything to a blender and blitz it.

I can’t recommend fresh, homemade tortillas for this. But if you have to buy premade store ones, I’ll forgive you...this time.

Serve on rocket, and top with feta, coriander, and chillies. Simple!!
