Asian Prawn Parcel.
This is a cracking low-calorie recipe. It’s also a really simple dish to make!! The only skill you need is rolling up greaseproof paper! This is stacked with veg and flavour. Served with lime & coriander rice.
Ingredients
5 Large King Prawns
Long stem Broccoli
A handful of Green beans
Handful of Mangetout
Handful of Beansprouts
1 Red Chilli
1 heaped tsp Garlic
A chunk of ginger, peeled and julienned
Iceberg Lettuce or Pak Choi
Sauce

6 tbsp light soy sauce
3 tbsp red wine vinegar
1 tbsp rice wine vinegar
3 tbsp water
1/2 tsp ground pepper
2 tbsp sweetener
Paste mix - 1 tbsp cornflour and 1 of water.
Method
Stick your oven on at 200 Celcius. Then cut up your greaseproof paper into big squares.

In a pan, add all your sauce ingredients EXCEPT your paste mix. Bring them to a simmer over medium heat. Remove from the heat and pour in your paste mixture while whisking. It will thicken it up for you.

In your greaseproof begin to stack your ingredients. Begin with pak choi or lettuce. Either quarter lettuce, or half the Pak Choi. Stack with broccoli, beans, mangetout, bean sprouts. Then place your prawn on top, pour over 1/2 of your sauce.

Add ginger, garlic, and red chillies on top of the prawn.

Wrap into a parcel, and place into the oven for 20 minutes. Top with spring onion, coriander, and a squeeze of lime juice.

Serve with a cup of rice.
